Hiya nerds!
Are you ready for another meal prep recipe? Awesome! Before heading to the supermarket, I always check to see what I have in my cabinets and freezer. It usually gives me an idea of what to make.
This week I had ground turkey in the freezer, and whole grain angel hair pasta. Perfect. All I needed were some veggies.
Here’s what I used:
- 1 pack of Butterball Everyday Ground Whitemeat Turkey
- 1/2 a box of Barilla’s Whole Grain Angel Hair Pasta
- Half a bag of frozen bell peppers and onions mix
- Half a bag of frozen greens beans
- Fresh grated Parmesan Cheese
- Extra Virgin Olive Oil (EVOO)
- Season to taste
First thing I did was toss the veggies in a pan over some EVOO. While they cooked, I set a pot filled with water sea salt, and EVOO for the angel hair.
Once the onions were translucent, I added the meat breaking it down as it cooked in the pan. As everything cooked, I tossed in the seasoning.
Back to the pasta, once it’s boiled, I opted out of using sauce. I don’t have a gallbladder, so the acidity in pasta sauce usually kills me. I tossed the noddles in with the meat, veggies, and a bit more EVOO to cook all together. Kind of like a pasta stir-fy. Finally, I topped it with some freshly grated Parmesan cheese, and all done!
It came out so good that I am already excited for lunch tomorrow.
