Happy Monday!
I love BBQ Sauce. It’s actually one of my favorite condiments. If I could bathe in it, I would. But that would be gross. My favorite sauces have been the ones you find at random local stores or mom and pop shops.
My mom knows how much I love BBQ sauce. And for my birthday, she gave me a sample box from The Roost Deli And Market in Bushkill, PA. OH MY STARS! Not only is their BBQ Sauce delicious, but also their glazes and fruit butters. The apple butter is crack!
The Peach Bourbon BBQ sauce has been sitting in my cabinet since November, and it was about time I broke it out.
So let’s get started. Here’s what I used:
- Boneless Thighs
- Peach Bourbon BBQ Sauce
- Brown Rice
- Red & Green Bell Peppers
- Onions
- Corn
- Favorite Seasoning: I used Trader Joe’s 21 Seasoning Salute & Sea Salt
I started by cleaning and cutting the chicken into smaller pieces and set it to boil until the meat became tender. I have a thing about raw chicken so I usually boil before baking it. Am I the only one?
Any who, I transferred it over to a baking dish and baked it on one side for 10 minutes at 450 degrees covered in the bbq sauce. And then flipped it over for another 5.
For my carbs and starches, I made brown rice, with peppers, onions, and corn. First, I let all the veggies cook in the pan together over olive oil cooking spray and then I tossed in the rice. Letting it cook together until the brown rice became golden.
And that’s it. I divided it into 5 different containers placing a cup of rice and about 5 strips of chicken in each.
I can’t wait for lunch!
