Happy Monday Nerds!
Let’s start the week right, and get some Meal Prepping done. I do mine on Sundays, and set my meals for the week ahead.
If you read this past #FitFriday’s blog about how I stay motivated, then you know getting myself ready before hand is one of the ways I keep myself going and on track. Meal prepping is one of the things that helps me do that. So each week, I make myself something different for lunch. And I am going to try my very best to share my meals with you.
Prepping your meals is pretty easy. You need a veggie, a starch/complex carb, and protein. The more you do it, the easier it gets, and the more creative you become. Like for example this week, I wanted something along the lines of Mexican food. So I tossed together my idea of a fajita.
What you’ll need:
- Ground turkey
- Brown Rice
- Green and red bell peppers
- Onions
- Guacamole
- Fat-free sour cream or Greek yogurt
- Cheese (optional)
- Extra-Virgin Olive Oil
And this is how I put it together.
Season the meat to your liking. I used Sea Salt, and 21 Seasoning Salute from Trader Joe’s because the fajita seasoning has way too much sodium.
I wanted to add some black beans to it, but I completely forgot to pick them up. So that’s another option to include.
To finish it off, I topped it with cheese, guacamole, and a dollop of fat free sour cream.
And I have great news, my trainer Jim, agreed to do a series on meal prepping, so look for that soon!

It was really good! I had some for dinner yesterday and I had to stop myself from eating all of it 😂
