There are some dishes that remind me of my childhood. I mainly stay from them because most of them are not well balanced. Mainly all carbs and starches, and no actual nutrition. But, why do they need to taste so darn good?!
Yet, once in while, I get the craving for some good ole comfort food. As it is for example “Arroz con Salchichas.” Its white rice with Vienna sausage, and corn. It’s SO good but yeah processed meat, not the best. Still PMS happens and I wanted to try to make a healthier version. So this is my go at it.
What I used:
- 2 small cans of Chicken Vienna Sausage
- 12oz of Brown Rice
- 6oz of Sweet Yellow Corn
- 2 Table spoons of Smart Balance Light Butter
- Seasoning: Sazonador Total Adobo & Sea Salt to taste.
I may have mentioned this before, but just in case, I make the worst rice. I know, I should be ashamed since I am Puerto Rican. But then again, I am not huge one rice, so I am ok with this. And instead of ruining a pot, I buy it frozen. And it actually tastes really good. Since it’s frozen, I put it to “steam” it in the microwave for 3 minutes prior to cooking with it.
While the rice steams, I tossed the corn and Vienna sausages to fry in the butter. Once they are nice and browned, I tossed in the brown rice, and seasoning letting it all cook together until the rice becomes golden brown itself. Also, this helps the rice dry up from the steam.
And that’s it. I tested it on my nephew Eric, who is serious rice head, and he liked it. Of course it’s not like the regular version. But for a healthier option, it wasn’t all that bad. So I call this a win!
