Happy Monday! Hopefully you survived your Super Bowl party. I am not feeling all too great today, but here I am with a new meal prep for you.
Sure we are allowed to indulge here and there, but how we get back to our routine is important. Consistency is key when it comes to a healthy life style. So that’s why I made sure I put together my meal prep so I tossed together some turkey meatballs and veggie spaghetti for the week.
FOR THE MEATBALLS
- 1 pack – Butterball Farm to Family All Natural Ground Turkey
- 1 cup – Jack Cheddar Shredded Cheese
- 2 Cups – 4C Bread Crumbs Japanese Style Panko Seasoned
- 1 Extra-Large Egg
- Seasoning to your taste: My go to’s are Trader Joe’s 21 Seasoning Salute and Sea Salt.
All I did was toss in all the ingredients together and mixed it with my hands.
The entire pack made a good 14 meatballs, and baked them 10 minutes on one side, and another 10 on the other. Then 5 more minutes the other side at 350 degree.
FOR THE SPAGHETTI
When I saw the Barilla Veggie Spaghetti at the market, I was really excited. Granted it’s only made with 25% zucchini and spinach puree. But still, I picked it up to give it a try and it’s actually pretty tasty. They also have cauliflower and hazelnuts.
As you’ve may have read me say before, tomato sauce makes me a bit sick, so I avoid it. Instead I tossed the noodles around the pan with a couple of spoons of Lawry’s Herb & Garlic with Lemon Juice.
It turned out so good! I know I say that every week. But it’s when you can’t have something, you always find a way to substitute it and in my case it turns out so good.
The flavor just explodes in your mouth.
