We are back to our regularly scheduled program and today I am sharing with you my super easy and fast lunch meal prep.
Every ingredient is courtesy of Trader Joe’s frozen section. Even if you don’t have a Trader Joe’s by you, this recipe is beyond easy to duplicate.
I prefer buying frozen rather than fresh because it lasts longer. Keep in mind, frozen veggies are packed at the peak of freshness. And when cooking, they are a great shortcut. No need to cut peppers. They are already cut for you.
I like random flavors and cuisines together. If it looks good, I toss it together. You never know what you could come up just by doing that. And this recipe comes courtesy of my crazy random tossing together.
Here’s what you’ll need:
- Trader Joe’s Quinoa Duo
- Fire Roasted Bell Peppers and Onions
- Extra Fine French Green Beans
- Sweet Corn
- Trader Joe’s 21 Seasoning Salute
- Sea Salt
The night before, I toss half a cup of each in a bowl with whatever protein I want for the day. I top the mix with both sea salt and 21 Seasoning Salute. Close the lid and done.
Yes, it’s that easy. No need to spend hours over the stove. And let’s face it, with my schedule, the last thing I want to do is slave over a stove. Ain’t nobody got time for that!
Oh, and for anyone interested, the bag clips I use are from IKEA.
