Hollar and Happy Monday!
Today I have for you a yummy side, that also could be eaten as a meal or snack in my opinion. I’ve been trying to increase my veggie intake, and wanted something with tons of flavor. So I did a healthy take on a side dish I had once at one of Mr. Emril Lagasse’s restaurants (Brussel Sprouts with Pancetta). I’m making Brussels Sprouts with Peppered Turkey bacon and lemon.
So let me get right too it, here is what you’ll need:
- 6 slices peppered bacon, chopped
- 1.5 lbs of Brussel sprouts, chopped (make sure there are large and small chunks)
- 1/2 cup diced onions
- Juice of 1 lemon
- Zest of 1/4 lemon
- Extra virgin olive oil
- Salt and pepper to taste
In a large frying pan cook up the turkey bacon for 5 minutes, stirring often. Set bacon aside. Then add 3 turns of the olive oil in the pan, and set to medium heat. Add the Brussel sprouts and onions, and let them cook down, about 8 minutes, or longer.
I make sure some pieces of the sprouts cook to brown, gives it great flavor. Then add back the peppered turkey bacon, and mix. Sprinkle with the lemon zest, and finally add salt and pepper to taste. Turn off the heat and add the lemon juice, mix well. Serve.
I don’t know what it is, but the saltiness of the bacon, the slight sweetness of the sprout, along with the freshness of the lemon just goes perfect together. It was SO delicious, the hubby agreed, and I generally have a hard time getting him to eat veggies. So this one is definitely getting into the monthly rotation.
