Happy Foodie Monday!
Today I am sharing with you my favorite side dish, and how I use it. As always, I pick things up at Trader Joe’s to give them a try. Yes, yet another Trader Joe’s feature. It really is the most amazing food store. I love it. I wish I could live there. Some of the products are ok. But some are so good, I buy them two or three at a time. And that is the case for my new and favorite side, the Trader Joe’s Quinoa Duo. It’s delicious, inexpensive, and super quick to make.
I practically put it on everything. I’m not kidding. So I am going to share with you my two favorite ways to pair it. But before we get to that. Here are some of the benefits of eating Quinoa:
- One of the most protein-rich foods we can eat
- Contains almost twice as much fiber as most other grains
- Contains Iron, and lysine
- Is rich in magnesium
- Is high in Riboflavin (B2)
- Has a high content of manganese
Ok so now on to how I pair Trader Joe’s Quinoa Duo. Like I previously mentioned, I have two favorite ways.
Breakfast | I prepare half a cup. Season it with sea salt, and then toss in two eggs on top and scramble it out. Some days I want extra flavor so I add green and red peppers, and onions.
Lunch/Dinner | Again I use half a cup. Toss in red peppers, green peppers, and onions. Season it with a pinch of sea salt, and 21 Seasoning Salute from Tader Joe’s. Then add in any protein I want; grilled chicken, turkey, shrimp, whatever I am in the mood for. And let all the flavors cook together in a pan with a bit of olive oil. It’s my take on a Quinoa Stir-fry.
