Happy Monday!I have something a little different for everyone today. It’s a food product review, and I’m super excited about it!
In my increasingly hectic life I needed a good, wholesome dinner that I didn’t have to prep, and I found it at Trader Joe’s of course! It’s called Spatchcocked Lemon Rosemary Chicken. The packaging was SO pretty, you could see the beautifully marinated butterflied chicken that I had to pick it up.
I was so excited to make it because I knew it would take 1 minute to set up. The packaging says to bake in the oven for about an hour, but I don’t have that kind of time when I get home from work, so in the crockpot it went, set on low for 6 hours. I put 6 red potatoes in the bottom of the crock along with 2 cups of chicken broth, and placed the chicken on top of that. That’s it, no joke, 1 minute prep.
When I got home, the house smelled amazing, like something savory mixed with a lemon grove. Then I dug into the crockpot and the chicken was falling off the bone. Oh and the flavor, it was buttery and lemony. The chicken was perfection. I was worried about the rosemary but it wasn’t that strong. I tasted sage more than anything else and it was divine. Honestly, yes I’ll say it again it was perfection. I’m never going to waste my time prepping a chicken again. It was about $16 USD and worth every penny. You all have to try this!
