Happy Foodie Monday! I had been in the mood for some super flavorful and succulent juicy chicken. So anytime I want my chicken to be super moist and falling apart I go straight to my slow cooker. This is one of those dump recipes, just throw it all in the cooker and it’s a super easy, set and forget kind of dinner.
What you’ll need:
- 3lbs. Boneless Skinless Chicken Thighs
- 32 oz container of veggie stock (unsalted)
- 1 cup of sliced peppers
- 1 cup diced onion
- 1 cup sliced mushrooms
- 1 can Trader Joe’s Grecian Style Eggplant with tomatoes and onions
- 1 tbsp garlic powder
- 1 tsp Mrs Dash Chicken seasoning
- 1 tsp Lawry’s Seasoned Salt
- 1 tsp Trader Joe’s Poultry Rub
- 1 tsp salt
- 1 cup of water
Super easy instructions, set the slow cooker to low for 8 hours. Dump everything in the pot except the chicken and the onions. Stir well to mix it up.
Place chicken in pot. Make sure the chicken is pretty much submerged in the mixture.
Spread the 1 cup of chopped onions on top of the chicken and cover. Set and forget.
When I got home, once again, my family tore thru half of the pot of chicken, they had it over rice. You can serve this with white or brown rice, or with baked or mashed potatoes. It was exactly what I was craving. I ate it for 3 days, and each day that it I had it, it tasted better, the flavor was off the charts yum.
