Recipe | Spice Crusted Chicken

Happy Foodie Monday! We hope everyone had a beautiful Mother’s Day.

Need a go-to, super simple chicken recipe? You have got to try my spice crusted chicken. It’s my favorite thing to make for meal prep because it goes with anything; rice and veggies, on top of a salad, over quinoa, or in a sandwich.

It’s so simple to make and tastes delish. I’ve even eaten a piece of this chicken cold by itself as a snack, it’s that good.

Here’s what you’ll need:

Spice Crusted Chicken 1

  • 1+ lb. of thin sliced chicken breast
  • 1 lime
  • Salt
  • Garlic powder
  • Trader Joe’s 21 Seasoning Salute
  • Mrs. Dash Chicken Grilling Blend
  • Extra Virgin Olive Oil (EVOO)

In a large frying pan, drizzle some EVOO to coat the bottom of the pan on a medium flame. Place the chicken in the pan once it’s warmed up. I know this will sound weird, but I only season one side of the chicken. Sprinkle each of the spices over the chicken to your liking. Let the unseasoned side cook for about 6 minutes, check that it’s nice and golden brown before you flip.

Let the spiced side cook for about 5 minutes and then squeeze the juice of one lime on the unseasoned side. Then let it cook for a few (2-ish) more minutes. Check that the seasoned side is nice and crusted with the spice. And guess what? It’s done.

Yes, that easy, and that quick. It’s a total of 15-20 minutes prep to table, or meal prep container (which is what I do).
