Crockpot Chicken Chili Recipe

Happy Foodie Monday!

When I’m not in the mood to cook, I try to come up with a crockpot creation.  I only used what I had at home, and it amazed me how delicious this recipe came out. Definitely making it again. So here is my healthy take on chili for a lazy day.

Here’s what you’ll need:

  • 1 lb ground chicken breast cooked
  • 1 can diced tomatoes
  • 1 can white beans
  • 1/2 cup quinoa (any variety) rinsed
  • 1 onion chopped
  • 1/2 bag frozen mixed peppers
  • 1 pouch of Gluten Free Chili Mix
  • 4 oz frozen chopped spinach
  • 2 green zucchini diced
  • 1 tsp garlic powder
  • 2 cups of water

Dump all the ingredients in the crockpot and stir.

Cook on low for 8 hours. When done, stir before serving.

I ate it on its own. The next day, I had it over a little bit of brown rice.

If you like sour cream add a dollop. And sprinkle some cheese if that’s your preference.

It was seriously yummy. I’ll probably never make chili on the stove again cause this was ridiculously easy and delicious.
