Ok, on to today’s recipe. On my quest to become healthier, I needed to figure out a great afternoon snack, you know something to get me through the 3:00 pm slump. I love anything crunchy, and I love nuts butters, and this concoction hits the spot. I’ve seen many variations of these but here’s my take on it.
What you’ll need:
- 2 cups Trader Joes GF Ancient Grain & Super Seed Oatmeal ( or just plain Toasted Oatmeal)
- 1/2 cup shredded unsweetened coconut flakes
- 1/2 cup ground flaxseed meal
- 1 jar of unsalted crunchy almond butter
- 3 tbsp honey
- 1 tsp sea salt
*Omit honey to make this recipe vegan, substitute with maple syrup or sweetener of your choice.
Just dump all the ingredients in a large mixing bowl, and get ready to get those hands dirty! Mix till well combined.
Then roll into golf ball size balls and place in a storage container. Refrigerate at least an hour, this allows them to set.
They are seriously sooo good, I just pop two of these and I get an instant boost. I think it’s the perfect mix of protein and carbs to get you thru the afternoon or any energy slump.
These are also great as a post workout snack.
