Foodie Monday: Valentine Cakepops

I wanted to do a fun Valentine activity with my munchkin for Valentines. She loves yellow cake, so to do something different I thought let’s make some cake pops (and some cupcakes while we’re at it). I wanted it to be easy, so I grabbed a box of yellow cake mix (and some chocolate frosting for the cupcakes). I also found some fun Valentine’s Day colored sprinkles, and put it all together.

Here’s what you’ll need:


  • 1 box of yellow cake mix
  • White chocolate chips (or any meltable chips you want)
  • Sprinkles or colored sugar
  • Red food coloring
  • Lollipop sticks

Make the batter per instructions on the box. We made a small cake and some cupcakes. Emmy loved helping!

After I filled the cupcake shells, I put 3 drops of the food coloring in the remaining batter and made a pink cake, this is what we’ll use for the pops. Cook as directed on the box.

LOVED the pink cake! So fun! Once cooked and cooled, crumble the cake by hand. Since my husband has issues with dairy, I omitted using cream cheese to bind the cake. Instead I used the “Moist Supreme” cake and it it formed into balls pretty easily, and then I put them in the freezer for 30 minutes.

While these babies were in the freezer, Emmy and I frosted and enjoyed the cupcakes. As you could see they were Emmy approved, LOL! Isn’t she a cutie?!

Ok, ok back to the pops. So I melted the white chocolate in the microwave and it didn’t seem to want to melt right. So then I melted some more using a double boiler. Let’s just say, epic fail. I honestly think I bought a bad bag of chips. #FAIL


So luckily I had some bittersweet chocolate chips in my pantry. I melted it over the double boiler since I already had it running, and dipped each pop. SUCCESS! I placed them on a plate lined with wax paper, added some sprinkles and put them in the fridge till set, about 20 minutes. Look how cute they came out!
