Foodie Monday: Chicken Soup Recipe

Now that it’s finally getting cold in the northeast, with that comes cold and flu season. And of course my home started the year off with colds for all, fun times. So what do I do when we are stuck home with colds? I make my favorite homemade remedy, chicken soup. It’s SO easy to make and super yum!

Here’s what you’ll need:

  • 6 chicken legs
  • 4 carrots chopped
  • 1 large onion chopped
  • 4 celery stalks chopped
  • 1 tsp oregano
  • 1 tsp Mrs. Dash Chicken seasoning
  • 1 tbsp Trader Joe’s 21 Seasoning Salute
  • 2 tsp sea salt
  • 2 bay leaves
  • 1 32 oz container low sodium chicken stock
  • 1/4 lb pasta of your choice ( I used a gluten free pasta)

First step is to boil your chicken legs in about 8 cups of water for 30 minutes to make some homemade stock.


Once done take out the chicken legs and set aside. In the home made stock, dump all remaining ingredients except the pasta and boil for about 20 minutes.


While that is boiling, carefully shred the meat off the chicken legs that were set aside earlier. Add to the veggie and stock mixture and boil for an additional 20 minutes.


Now it’s time to add your pasta, cook for about 10 minutes and you should be ready to serve. Just adjust your salt and pepper to taste.


Doesn’t it look yummy? We all really enjoyed it, and just what the doctor ordered to help fight our cold.

This recipe makes a big pot of soup; roughly 10 servings.
