Recipe: Shortcut Chicken Sausage & Peppers

Are you having a party or going to a party and want something quick and delicious to bring? Shortcut sausage and peppers is my go to recipe, and the second best part about this recipe is that you don’t get too many pots and utensils dirty. I usually make it the night before because the flavors meld overnight and make it SOOOOO delish.

So here is what you’ll need:

To start, get a large pot full of water boiling, preheat your oven to 350 degrees, grease a large cookie sheet with EVOO, and grease the bottom of a lasagna size disposable foil pan with EVOO as well.

INGREDIENTS

  • 2 bags of frozen sliced mixed peppers (I use Trader Joe’s brand)
  • 1 large onion sliced
  • 6 cubes of Dorot garlic or 3 tablespoons of jarred diced garlic
  • 3 packages of sausage (I use Premio chicken sausage to keep it a healthier)
  • 2 teaspoons of garlic powder
  • 1 tsp of black pepper
  • ½ cup parmesan cheese (grated)

First start with the foil pan, throw the peppers, onion, garlic, and black pepper. Toss it all together and cover with foil and put it in the oven.

When the water is boiling put in the sausage and let it cook for 20 minutes.

Just before the 20 minutes is up on the sausage check on the peppers and onions in the oven and give it a stir. Put it back in the oven covered.

Now that the sausage is boiled carefully take them out of the water and place them onthe greased cookie sheet.

Cook the sausage for about 15 minutes and then turn them over and cook for another 15 minutes so they can evenly brown.

Once they are brown, take them out of the oven and cut them up to your liking, I usually do about 1 inch pieces. Once it’s all cut up, take out the peppers and onion pan, add the sausage and the parmesan cheese and toss it all together. Return this pan to the oven for 20 minutes covered. Voila! It’s done.

You can serve it immediately, it taste great, but I just love it more the next day! If you are taking that route, let it cool down for about two hours and then put it in the fridge overnight. To reheat the next day put it in the oven 30-40 minutes  at 350 degrees.  ENJOY!!!!!!!!!!!!!!!!!
