Hoping you had a great St. Patrick’s Day!
What do you do if you have leftover corned beef from your St. Patty’s celebration? Make corned beef hash for breakfast of course! It’s SO easy and SO good. Let me tell you how I put this together.
What I used:
- Left over corned beef chopped ( I had about 3 cups)
- 4 large potatoes cubed
- 1 medium onion diced
- 1 red pepper diced
- 1 green pepper diced
- 2 cloves of garlic minced
- Black pepper, paprika, and salt to taste
- (Extra-Virgin Olive Oil (EVOO)
Chop everything first, so you can put this together quickly.
In a large skillet sautée the onions, peppers and garlic in EVOO until the onions look translucent. Pour into a bowl and set aside.
Add some more oil to the pan to cook the potatoes, when you notice they are starting to get soft, throw in the corned beef and onions & peppers mixture. Stir together well and let cook til it melds together and looks a little mushy.
Before adding anything else, taste the hash, and then season to your liking. I try not to add salt because the corned beef itself if fairly salty (and I had bought the low sodium kind).
And that’s it, you’re done. It probably took me about 25 minutes to make, and it was so worth it. I had mine with two eggs over easy and it was heavenly. It was enough for 3 adults for 2 days of breakfast.
