Happy Thanksgiving week. Gobble-gobble!
Today I’m sharing with you my new favorite way to make sweet potatoes. I love a good baked sweet potato, but I hate that it can take an hour+ to cook. So I though, why don’t I cut them up and bake them the same way I make regular potatoes? And guess what, it worked fantastically!
Here is what you’ll need:
- Sweet potatoes (skin scrubbed clean)
- Extra Virgin Olive Oil
- Coarse sea salt
- Cinnamon
- Baking sheets
- Preheat oven to 425 degrees.
Slice the potatoes 1/3-1/2 inch thick, and toss in some EVOO and coarse salt. Place on a cookie sheet and put in the oven for 8 minutes.
Turn potato slices over and put back in the oven for 10 minutes. Yep that’s it, they are done in about 18-20 minutes depending on how thick you cut them.
Before serving, I sprinkle them with some cinnamon and toss them together again so they are evenly coated. YUM is all I have to say.
I am so excited to make these on Thanksgiving. I can’t believe I can make them at the end of my cooking marathon instead of taking up a lot of space in the oven for 1+ hours during the day. And personally I think they taste a bit better because they do get some caramelization on them from baking at such high heat.
