Cauliflower Fried Rice

Happy Monday Foodies!

Let me start by saying, OMG is it really August?! Sorry I have a case of the Mondays and I don’t think it clicked in my brain yet that it’s August, and summer will be over in a few weeks. Ugh, we are a week into August already!

Any-who, I keep hearing about riced cauliflower. It seems to be so popular, now you can find it in the freezer section of just about any supermarket. I thought to myself…”Let’s try this Cauliflower Fried Rice everyone keeps talking about.” And that is what I have for you today my friends.

I bought everything pre-chopped, because who likes chopping veggies? Not me!

Here is what you’ll need:

Cauliflower Fried Rice Ingredients

  • 1lb of riced cauliflower
  • 1lb of your favorite chopped veggies (I found a container of healthy 8 mix at Trader Joe’s of course)
  • 1 cup chopped onions
  • 2 eggs scrambled
  • Soy Sauce (low sodium) or Coconut Aminos
  • Garlic Powder
  • Seasoned Salt
  • Extra Virgin Olive Oil (EVOO)

I sautéed the chopped veggies, excluding the cauliflower in some EVOO and spiced it up with the seasoned salt and garlic powder (do this to your liking, but remember go easy on the seasoned salt because the soy sauce we’ll add later is already salty). While the veggies were cooking I scrambled the two eggs. Once the veggies looked mostly cooked down I threw in the eggs and riced cauliflower, I let this cook for another 3 minutes before adding the soy sauce. Add 2 tablespoons at a time and taste test, adjust to your preference.

This was super easy to prep, and it was delicious. To be honest though, I did miss the real rice. But in our journey to be healthy we make substitutions that are better for us and this is definitely an excellent option that I will make again as a side. If you want to make this a main dish, throw in some chunks of tofu, chicken, or beef.
