Guys! Guys! GUYS! What a super easy one pan meal. I love when I throw something together and it comes out amazing. And that’s exactly what happened here. All ingredients are from Trader Joe’s (can you tell us Nerd & Lacer’s love that place? LOL).
Here’s what you’ll need:
- 1 pkg Sundried Tomato Basil Chicken Sausage
- 1 box Veggie Stock
- 1 cup Quinoa (rinsed)
- 1 pkg Sliced Mushrooms
- 1 pkg Healthy Chopped Veggie Mix
- Extra Virgin Olive Oil (EVOO) for cooking
- Seasonings to your taste: salt, pepper, 21 Seasoning Salute
Boil the sausage, and then brown. Transfer to a plate and cut into small slices, set aside.
In same pot, sautée the mushrooms and veggies in some EVOO until cooked down.
Add sausage back in pan, stir, and add stock. Adjust your seasoning to your liking.
Last step is to add the quinoa. Stir well and set to simmer. Let it cook covered for about 20 minutes till quinoa is done.
It’s a delicious and hearty, one pan meal. This recipe is also very versatile; you could substitute the sausage with tofu to make this vegan, or just switch up the meat to your favorite protein. I think my hubs would love this made with chunks of lamb. Keeping this recipe in my back pocket.
