Happy Monday y’all! We hope you had a relaxing weekend. I know I needed one after the Holiday madness. It was good to sit and not worry about anything.
I recently bought a slow cooker and I decided to give it a try. I didn’t have much in my fridge since I really haven’t had time to go food shopping. But I wanted to try and see if I could make anything that would actually taste good.
I had:
- Free range chicken breasts
- Honey BBQ Sauce
- Seasoning
So, Honey BBQ Chicken it was. Not that I am complaining, I love BBQ anything. I must apologize in advance, I have NO pictures of all the steps. I was waiting for the exterminator to stop by so I rushed through putting this together.
Taking the frozen chicken, straight from the freezer, I washed it cut it into a zillion pieces. Then I placed it at the bottom of the slow cooker.
I sprinkled my favorite already made seasoning, Goya’s Sazonador Total, all over the chicken. I then covered it with half a cup of water, and squeezed 3/4 of the bottle of my favorite Honey BBQ sauce by Sweet Baby Ray’s.
I left it on for 4 hours on high, and then before heading to the gym, I switched it to medium heat.
Guys, when I got home, my house smelled amazing and the chicken tasted even better. I had enough chicken for three meals. And at work everyone kept coming into the kitchen asking me what I was eating.
For being my first go at the Slow Cooking world, I think I did pretty good. GO ME! I mean, it was so simple and easy it doesn’t take a genius to figure this out. Not that I am a terrible cook. On the contrary, one of the best cooks in the world gave birth to me, and I’ve been cooking all my life.
You have to understand, when you grow up with a mom that was a private airline chef for celebrities (yes famous people ate my mother’s food), cooking is more of a chore than a joy. That’s why I go out of my way, not to do it. But it is healthier to eat at home and to make your own meals. This is why in continuing with my healthy life style, I am stepping out of my comfort zone, and cooking more at home.
