Recipe: Pesto Turkey

Let’s talk about turkey. When someone mentions turkey my mind goes right to Thanksgiving. But guess what? Turkey is not just for that time of year. Turkey is a great way to change things up if you generally make a lot of chicken and want something a little different. And speaking of different, how about preparing this turkey with a little Italian flair? Sounds good right?! Right?! So here is my new creation: Pesto Turkey

To start out you will need a baking pan sprayed with non-stick spray, and set your oven to preheat at 450 degrees.

What you’ll need:

  • 2 lbs of boneless skinless Turkey Tenderloins
  • Your favorite seasoning mix (come on we all have our favorite)
  • 2 Tomatoes (sliced)
  • Black Pepper
  • Jarred or homemade Pesto
  • 1 lb. shredded mozzarella
  • Parmesan cheese
  • Parsely (dried)
  • Thyme
  • Basil
  • Oregano
  • Minced Garlic

Here’s what you’ll need to do:

Place the turkey on the sprayed pan and sprinkle with your favorite seasoning and black pepper.

Then cover each piece of turkey with some pesto.

Layer the slices of tomato on top of the pesto.

Then smother it all with the mozzarella and Parmesan cheese to your liking.

Finally, sprinkle some more of your favorite seasoning. And add the minced garlic, thyme, basil, and oregano before baking for 30 minutes. Before serving, make sure you let the cheese cool off a little bit.

Doesn’t it look amazing?! This is definitely not thanksgiving turkey, but certainly one to enjoy.
