Breakfast Of Champions

The weekend is fast arriving, and it’s during that time of the week is when we tend to neglect our healthy eating habits. But not to fear, Ange is here with two variations of her Breakfast of Champions.

First we have a twist on Eggs in a Bowl. When I was a kid I hated breakfast. But if my dad would make me eggs in a bowl, I would eat it and we would watch TV before anyone else woke up. All he would do was soft boil 2 eggs and I would tear up two slices of bread. Then you crack the egg in half, samurai style, let the yolk fall into the bread and scrape out the whites. Now as healthy continence adult, I now make it with:

  • Ezekiel Bread
  • Green Onions
  • Cherry Tomatoes
  • Half an Avocado

As an added option, you could add a crumbled up piece of turkey bacon. Sprinkle chia seeds on top and chopped parsley. Seasoned with salt pepper and garlic.

To cook the eggs, bring water to rolling boil, and drop eggs in for exactly 3 minutes. Then run them under cold water to stop the cooking and cool the shell so you can touch it.

As for the sandwich, you’ll make it using the same ingredients. The difference is that for the bowl, you soft boil the eggs, and for the sandwich you poach the egg.

To poach eggs, check out this video from science geek and celebrity chef, the Thyne Lord himself Alton Brown.

Which ever way to prefer, you’ll be eating a healthy and delicious breakfast. A breakfast that contains tons of nutrition and good fat to keep you going.

If you make this or any of my recipes, make sure you share them on social using the hashtag #NLFoodie.
