Foodie & Spork: Whole Wheat Mango Muffins

Foodie & Spork - Whole Wheat Mango Muffins

Spring Bonjour

I’m seriously PMSing (I know TMI lol) and I indulged my dinner tonight. Had some yummy Malaysian food. I’m also craving sweets in the worst way. But since I had two small cookies earlier, I’m not going there. Still I spent about an hour scrolling sweets on Pinterest. Just feeding my eyes lol.

That’s when I found these yummy muffins from The Realistic Nutritionist. They look super simple to make, and each piece is about 116 calories, or three WeightWatcher points. OK! Now this is more like it. Sweets that I can indulge in and not regret it later. HAPPY DEE!

The recipe is from SheKnows so check it out:

INGREDIENTS

  • 1-1/2 cups whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/3 cup brown sugar
  • 1/3 cup white sugar
  • 2 teaspoons baking powder
  • Dash of salt
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon
  • 1 cup chopped fresh mango
  • 3/4 cup low-fat milk
  • 1/4 cup applesauce
  • 1 egg
  • 1 teaspoon vanilla

DIRECTIONS

  1. Preheat oven to 400 degrees F. In a large bowl, whisk the flours, sugars, baking soda, cinnamon and salt together. In another bowl, mix the milk, applesauce, egg, vanilla and mango. Pour wet mixture into the dry mixture and stir to combine.
  2. Line a muffin tin with cupcake liners. Fill each cavity about 3/4 full with muffin batter. Bake for 12 minutes or until golden brown and a toothpick inserted in the middle comes out clean.

I need to make these STAT!

Now I need your help, I am looking for low sugar-low carb recipes for sweets. If you have a good one, leave a comment below. THANKS!
