Happy Foodie Monday!
Originally I planned to make meatloaf for dinner last night, but I lost track of time. So I needed to think fast on how to speed up cooking dinner. All of a sudden my sleepy Sunday haze passed and I thought, let me just throw the meatloaf mix into a muffin pan, it will cook in less than half the time. Brilliant!
So here’s what you’ll need to make the meatloaf mixture, this will make a dozen muffins:
- 2lbs ground chicken
- 3 pieces of Ezekiel bread
- 1 cup chopped onions (frozen)
- 1/2 cup chopped mushrooms (frozen)
- 4 oz chopped spinach
- 1/2 red pepper chopped
- 2 eggs
- 1/4 cup Parmesan cheese
- 1 tsp garlic powder
- 1 tsp of chicken seasoning
- 1/2 tsp seasoned salt
First crumble the Ezekiel bread, then add all the ingredients except the ground chicken, mix that with a wooden spoon.
Once well mixed add the ground chicken and get your hands dirty and mix it up!
Portion out into 12 muffins.
Bake at 350 degrees for 25-30 minutes.
Pop out of the pan and serve with your favorite sides.
These are so easy, I bet they freeze well but they didn’t last in my house. Super healthy and delicious.
You can make this with ground turkey or beef, whatever floats your boat. I love this recipe cause it sneaks in a bunch of veggies into a tasty protein.
