Easy Pesto and Quinoa Recipe

Happy Monday y’all and Happy Piπ Day! We’re back to our regularly scheduled programming, hurray!

Today I bring you a super easy recipe. Trader Joe’s sells products that make me feel like a gourmet chef. But all I did was toss things together.

This is a two part recipe but this is what you’ll need:

Let’s start with the chicken. Using a deep pan, I set the drumsticks to cook in stock and added a good amount of all the seasonings listed above. I covered it and let it cook for about 60 minutes on medium heat. I didn’t defrost the chicken that’s why I cooked it for so long. And I wanted them fully cooked before placing in the oven.

Once cooked, I moved the chicken onto a cookie sheet and coated the sticks with the Pesto and Quinoa sauce. Then I placed it in the oven at 350°F for 10 minutes on each side, and done!

For my side, Organic Superfood Pilaf, once it was thawed out, I place it in a frying pan and let it cook up a bit. As it cooked, I cut the sweet potato pieces down (there were big chunks that would make it hard to eat). Once done, I poured in about a cup of the stock I had cooked the chicken in, and let it cook until the liquid evaporated. Once the liquid dried, I tossed it a bit in the frying pan for texture.

And that’s basically it. I divided it into 5 meals for lunch. I will say this, it tasted better the next day when I reheated it. So good and very filling.
